Candy Coma!

Tasty Tuesday #2

Hi Lovelies! It time for Tasty Tuesday! Today I'm going to share my recipe for Mexican cornbread. I have been making this particular recipe for years, it has become a weekly dinner (usually on Friday or Saturday nights) during the long winter months. It tastes great with some chips and salsa and a nice tossed salad on the side. 

Here is the recipe. Enjoy!!! 

Mexican Cornbread

1/2 to 1 lb hamburger meat (browned)
2 eggs, beaten
1 can cream style corn
1 can green chilies or jalepanos, chopped 
1 cup cornmeal
1/2 cup canola oil
1/2 cup milk
1 1/2 cups grated cheddar cheese
1/2 teaspoon salt
1/2 teaspoon baking soda

Brown hamburger meat, drain if there is any oil. Mix dry ingrediants (corn meal, baking soda, and salt. Next, mix wet ingredients together (eggs, corn, milk, and oil). Add the wet ingredients to the dry ingridents. Mix well.  Spray baking pan ( I use an 8 x 11 pan) with cooking spray. Add half of the cornbread batter to the pan, then layer the hamburger meat, then sprinkle the cheese on the hamburger layer and then add the chilies or jalapenos, and then add the other half of the cornbread batter on top. Bake at 350 degrees for 45 to 55 minutes. Serve with chips and salsa and a tossed salad.

These Are the Hats That I Wear

Disclaimer: This post was inspired by Becky from the blog From Mrs. to Mama. After reading her post on the many hats she wears, I started thinking about the many hats I wear and started writing this post. 

My dearest Lovelies,
In my ordinary life, I wear a lot of hats. I don't think alot about these hats, but there are times that I do think about all the things that I do. Sometimes my husband wanders why I'm stressed out at the end of the day ( I have a toddler who is currently in the thoroughs of the terrible twos) and why there are days that we only have sandwiches for supper.  There are days that I just feel like I have not accomplished anything ( there are dirty dishes from breakfast and lunch in the sink and about 6 piles of laudry to fold and put away) and there are days that I just don't feel appreciated. I know I should not feel this way, but I'm human. So...

Who am I and What do I do.......

I'm a mother. First and foremost, I am a SAHM. It is by far the hardest job I have ever had and it is the most important part of my life. My child and any other future children come first. Her health and happiness is and always will be my number priority. She will always have the healthiest of foods to eat and she will always have her outside time, because girlfriend loves to play outside (weather permitting). She will have "school time" (she loves the educational websites that I have found) as well and she will know how to be gentle and how to be kind to others and she will know owr to say please and thank you. She will know just how much I love her, treasure her, and cherish her. She is my light and I live for her!! I love my job with out a doubt!

I'm a Wife. My husband is my best friend and my soul mate. We have know each other for mos of our lives.  He is my better half. Without him I would not have the life that I am living right now. He saved me from my other life ( a life where I would have been taking care of my parents, my siblings, and then my siblings children) and he made me a the wife and mother that I am today. I am as old fashioned as they come, I am the traditional wife. I make sure that my husband has three home cooked  meals a day ( well, most days) and I make sure the house is clean (most days). I make sure he has time to himself in the evenings (to play his Xbox games and  to watch football). He does not expect me to do this, I do these things because I want to do and I feel these are the things that I wife should do for her husband. I believe in tradition and it is a big part of who I am.

I'm a photographer/cinematographer. At least I try to be. It's getting difficult to  wrangle a two year old and get her sit for longer two minutes so that I can get a decent a picture. It is also difficult to get a cute video of said toddler, especially when she wants to see herself in the video while I am trying to record said video. My pictures my come out blurry and the video might not come out like I want it to, but still have the memories that we made and I will cherish them forever and ever.

I'm an online grad student. Being a student is important to me. When I decided to become a SAHM I had to stop attending the college that was pursing my degree from. I did this mainly because it was difficult to attend class while having a newborn at home. It was then that  I decided to trade in the brick and mortar college for an online college. Even though I have been working on my degree ( a Master's in Psychology) for the last year by taking only 1 class every 8 weeks I am proud to say that I will have my graduate degree in Summer 2014!

So, there you have it Lovelies, the many hats that I wear. I would not trade the life that I have for anything in the whole world. My family defines who I am and it also determines that kind of hats that I wear every single day.

Show and Tell Monday

 How I met your father.
 
1. Tell us about how and when you met your love and what attracted you most to him.
  
Paul and I have known each other for most of our lives. We went to the same school from grade school through high school. We even had some of the same friends, we just never got together. All of that changed in the Spring of 1993 ( the year that my new life began). We took the same Criminal Justice class at Cameron University in January 1993 and we began dating in March of that same year and we have been together for 16 years. I knew right away that I would spend the rest of my life with him. Without him in my life I don't think I would be where I am today He has helped me grow into a better person and has helped make me the person that I am today. I have put him through alot and it's amazing that he has put up with me for all of these years.

2. Show us the very first {or one of the first} pictures you guys ever took together. {Feel free to show us more than one}

I don't have a picture of us when we first started dating. I really wish I had one!!! 
 
3. Tell us some of your favorite memories that you two had together.

Sunday Social

 Hi Lovelies!! This week's Sunday Social is all about Halloween!!! I love Halloween, it's the only holiday where for one night you can be whomever you want to be!!!! Let's get to it!!!



1. What was your favorite Halloween costume as a kid?(pictures??) 

The tiger costume my mom made for me when I was seven. She used to tell me that I wore it all the time!! There was a picture but unfortunately I don't have it :(

2. If you could go back and dress up as something what would it be?

Probably a superhero, maybe Wonder Woman?

3. Favorite costume as an adult?(pictures)

I usually don't dress up for Halloween, but this Halloween Baby girl has requested that I dress up as Elmo!! I bought an Elmo t-shirt, and she has the frilly Elmo costume, and daddy will wear his cooking monster t-shirt. Here are some pics of the "costumes":

I love the 80s Saturday: The movie edition

Hi Lovelies!!!! 
As some of you already know I am a child of the 80s. I love everything about the eighties, the hair, the music, the movie, the clothes, and the books. In fact, the theme for my 40th birthday party is all about the 80s!!! Whenever I watch a movie or hear one of my favorite songs it immediately takes me back to the first time that I ever watched the movie or heard the song. For me, it was such a fun time.

I thought it would be fun for me to share some of my favorites from the 80s every Saturday. I hope everyone enjoys this as much as I do. Here are some of my favorite movies (this is the short list, I will share more later).


Pretty in Pink (1986). Classic movie!! One of the best of it's time!




The Karate Kid (1984). I still love the orignal and it has one of my first celebrity crushes in it, Ralph Macchio!



Ferris Bueller's Day Off (1986). Bueller? Bueller?


The Breakfast Club (1985). The best "detention"movie of all time!



Back to the Future (1985). Love this movie trilogy, one of my favorites!


Sixteen Candles (1984). Jake Ryan, *swoon*. Need I say more?

If you haven't seen any of the movies I highly recommend them. I think you will enjoy them as much as I do!!

It's Okay Thursday

Hi Lovelies! It's Thursday and you know what that means! It's time for It's Okay Thursday. I'm linking (if I can get to work this time) with Neely again!!!  So here we go!



It's Okay......

that I'm already planning my Thanksgiving menu (and it's not even Halloween yet) and that I already have my grocery list already typed and printed out.

that I'm going to go to Sonic tomorrow while running errands. YAY for coupons!

that I have a 15 page paper due next week (first draft) and I am just now starting on it. I keep telling myself that I will get it written and turned in before Halloween (that's when it's due).

that I have 4 loads of laundry to fold up and put away. This always happens at the end of week and I have just learned to accept it.

that I watch Friends on Nick and Nite every night. It's one of my favorite shows!

I haven't watched any of the presidental debates. I really have no interest them.

I absolutely love the movie "Rock of Ages"!!! I am a child of the eighties!! 

I thought Tom Cruise was AWESOME in the movie. He may be crazy, but he is a great actor.

I'm not dreading turning the big 4-0. I have decided to embrace it instead. 

I already have my birthday party planned. It's going to be 80s all the way baby!

I let my daughter run around in a t-shirt and pull up most of the day yesterday.

I would rather gauge my eyeballs out with a spoon than watch another episode of Caillou. At first it was cute, now it's just annoying as hell!!!

Weekend Recap

Hi Lovelies! We had a semi-busy and fun filled weekend! Here's a recap of Friday through Sunday. Enjoy!!!

Friday-

We spent the day relaxing, napping, and watching some of baby girl's favorite shows (Barney, Caillou, Dora, and Sesame Street). After naptime we took Baby girl to the park and she had a blast. She played in the sand, slid down the slide, tried out the swings, and played in the sand some more. She loved building sand castles! I did not bring camera with me so I don't have any pictures of her awesome sand castles (Mom Fail #1).

Saturday-

Daddy and Baby girl spend the day relaxing while Momma did her daily chores, put supper in the crock pot and tried to catch up on the never ending laundry pile. After naptime, we decided to take Baby girl to the pumpkin patch. This was her first trip so she was very excited! All the way there she kept saying "I so excited to go to punkin patch!!" When we got there, I think all three of us were a little disappointed because it was literally a pumpkin patch. There were no rides, or bouncy houses, or mazes, just a pumpkin patch. Although it wasn't what we expected we still had fun and Baby girl picked out to small pumpkins and was as happy as a clam. Again, I did not have my camera so I don't have any pictures of her picking out her pumpkins (Mom Fail #2).

That night, the Husband and I decided to rent Rock of Ages. YAAAAAAY! I have been waiting for months to see and I was not disappointed. I loved, loved, loved the movie!! 



I loved the music and I know I'm going to get some flack for this one, but I loved Tom Cruise as "Stacy Jaxx". He was awesome!! I know he's crazy and has completely lost his mind, but he is a great actor!


The music that was featured in the movies brought back so many memories for me. I don't if I am the only one, but when I hear certain songs (i.e. You Give Love a Bad Name, Photograph, Every Rose Has It's Throne, I Remember You, etc) they take me back to the first time that I ever heard them.I plan on buying the soundtrack so I can have for my 80s themed birthday party!!!!!!

Sunday-

Sunday was full of football and food! Of course we watched the Dallas/Carolina game (Cowboys won!!!).


And I fixed nachos and chili (I'll post the recipes this weekend). The food was yummy!!! All in all, we had a great, relaxing weekend. I hope we have more of them!!!

Tasty Tuesday

Hi Lovelies!! I have decided to start implementing "Tasty Tuesdays" every Tuesday. For this, I will feature a recipe that I have made during the previous week. I hope everyone tunes in! Enjoy!!

Twice Baked Potatoes
Ingredients

    20 small new potatoes (I used russet potatoes)
    1 tablespoon extra-virgin olive oil
    1 cup shredded extra-sharp cheddar cheese
    1 cup sour cream (substitute cream cheese)
    1 1/2 teaspoons salt
    1/2 teaspoon pepper
    Paprika, for garnish

Directions
      Preheat the oven to 400 degrees . Pierce the potatoes with a fork, arrange on a baking sheet in a single layer and brush with the olive oil. Roast, uncovered, until tender, 40 to 45 minutes. Let stand until cool enough to handle.
    Halve the potatoes; using a melon baller or a teaspoon, scoop out most of the flesh into a bowl. Return the potato skins to the baking sheet. Coarsely mash the potato flesh in the bowl and stir in the cheese, sour cream, 1 teaspoon salt and the pepper. Sprinkle the insides of the skins with the remaining 1/2 teaspoon salt; stuff each with the potato-cheese mixture and sprinkle paprika on top.
      Bake the stuffed potato skins until golden-brown on top, 15 to 20 minutes.

My daughter is my first accomplishment. My second accomplishment is one I am working on  right now, my Master's degree in Psychology.

Me Myself and I

1. What is your favorite season?

My favorite season is actually Fall. I love what Fall brings with it: leaves changing colors, football (Go Cowboys!), Halloween, and of course, Thanksgiving.

2. Talk about the moment that changed your life.

I actually have two moments. The first one would have to be when I left home. I finally became my own person and I had my own life with my boyfriend, who I am married to now. The second moment would have to be the birth of my daughter. She has completely changed me, she made me a better person, and she made me a mom. I love her with all my heart!

3. If you could be any crayola crayon color, what would be and why?

I would have to be purple, just because it is my favorite color. 

4. Describe yourself as a superhero: super power, name, and sidekick.

This is a tough one for me!!! I know I would to invisibility as a superpower, but I have no idea what my superhero name would be or who my side kick would be. 

5. If you had all the money in the world, and could only shop at three stores, where would you shop?

Grieving for a grandmother that I never knew

How do you grieve for someone you really do not know? I found on Monday that my nana (my dad's mother) passed away. I really never knew her. When I was younger she would call once a month and then we would write letters to each other, but I really did not know her. I have only met her one time, I was 20 and that was the only time that I had ever seen her. I haven't talked to her I left home over 18 years ago. I don't talk to my dad, my step-monster, or my brother and two sisters (that's a long story that I will have to tell if anyone is interested), so I haven't heard anything about her. So, again....how do I grieve for a grandmother that I did not know, but would have liked to have known?
I wish I would have been to talk to her again. I lost contact with her when I left home and I never knew where she was living. Like I said before, I don't talk to my family anymore and I knew they probably never would have told me anyway. I just wish I knew her and I wish that I could tell her that I love her and that I'm sorry that I lost contact with her.

Winifred Tracy, previously from Lake Worth and presently having resided at Noreen McKeen Health Center, passed away on Columbus Day, October 8, 2012. Winnie was the daughter of Josephine and James McManus of Ireland. She would prefer her age to remain anonymous! Mrs. Tracy was pre-deceased by her husband Raymond Tracy, Past President of Alfar-Boutwell Dairy in West Palm Beach. She is survived by her 5 children, grandchildren, great grandchildren, nieces, and nephews . She was a past member and communicant of St. Ann's Catholic Church in West Palm Beach, where her faith was important to her. Winnie's favorite pastime besides sewing and cooking, was shopping, and I am sure she has already been missed by Wal-Mart and Kmart, not to mention Goodwill and Salvation Army. She was the Queen of Style and always dressed to the hilt with a snazzy hat to match every outfit! Winnie will be missed by her Lake Worth neighbors, friends, family and all the wonderful care givers at Noreen McKeen Health Center, who we are so thankful for. A Memorial Mass will be held at 11:00 AM on Friday, October 12, 2012 at The Lourdes-Noreen McKeen Chapel, 315 S. Flagler Drive, West Palm Beach, FL 33401. A private interment next to her beloved Ray will take place at Our Lady Queen of Peace Cemetery, Royal Palm Beach, FL.

So What Wednesday

Hi Lovelies!!! It's Wednesday and we all know what Wednesdays are all about!! So What Wedenesday is here!! I'm linking up with Shannon again!!! Here what I'm saying So What to!!

 

So What If.......

I lock myself in the bathroom just so I can be alone for a few minutes (I need some "me time"). Please, please tell me that I'm not the only one who does this!!!

I'm excited for Halloween. We are decorating this weekend and I just ordered Baby Girl's costume.

I'm super excited for Thanksgiving this year. I'm hosting again which means I get to do all of the cooking, which I love to do!!!

I can't wait for the premiere of Ice Loves CoCo. I just love this show and they are so cute!!!

I catch up on some of my favorite shows during naptime. It's better than folding laundry! 

I haven't tried a Pumpkin Spice Latte from Starbucks. I don't like coffee therefor I don't drink coffee. Give me some Caramel Hot Chocolate any day!!

Weekend Recap


Friday
 
Our weekend was fun and relaxing. We decided to take a spontaneous trip (as spontaneous as you can get with a toddler) to Wichita Falls Texas. Baby girl was a dream during the entire trip. Baby girl got excited when we told her that we in Texas and promptly said "Let's go see the toys!!!!!" Girlfriend has her priorties straight doesn't she?

Our first stop was to Target. I think we played with every single toy in the toy aisle and baby girl even left with a new guitar ( all she had to do was look at Daddy and say "guitar please Daddy" and of course he bought it for her. She has her Daddy wrapped around her little finger doesn't she?

Our next stop was of course Baby girl's favorite store, Toys R Us. We spent 2 hours in this store and watched Baby Girl ride a two wheeler with training wheels all over the store. I felt like I had two kids that day!!

We left with this bike for Baby girl. I consider it an early Christmas present. She rode this bike all over the store and she loved it!!!

Saturday

We decided just to hang out at home and relax. I did some cleaning and of course I tackled the never ending laundry pile. Husband spent some quality with baby girl and we just relaxed together as a family. 

Sunday

This was another very relaxing day. We watched football and I made a nice lunch and baked a little bit with my special helper. Again, we just relaxed together as a family and spent some quality time together.

This weekend was great!!!! I hope we can have many more just like it!!!

Sunday Social

All things Fall

I'm sorry I haven't blogged in a few days, my days have been busy, busy, busy. Anyways, today's Sunday Social is all about fall! I loooooove fall. It's actually my favorite season of all of the seasons. To me fall means, warm clothes (jeans, sweaters, boots, scarfs, etc,), Halloween, Thanksgiving, and of course baking.

Here are a few of my Fall Favorites:

1. Football

I love football, especially the NFL. We watch some college football not a whole lot. When we do watch college football we watch the OU Sooners. As for the NFL, it's the Dallas Cowboys (although we may switch teams if they don't start playing better).

 



2. Caramel Hot Chocolate

This is the best hot chocolate I have ever had. It tastes that good!!

4. Halloween

Halloween is my favorite hoilday!! I cannot wait to decorate our front yard this week. It's going to be so much fun!!


5. Thanksgiving

I also love Thanksgiving! Who can pass up all of the delicious food that comes with it!!
