Hi Lovelies!
Since St. Patrick's Day is just around the corner, I thought I would make a St. Patrick's Day themed menu. I think I will start off with this delish looking Irish Beef Stew.
2 Tbsp.
flour
2 Tbsp.
oil
1 large
onion, coarsely chopped
1 can
(14-1/2 oz.) beef broth
1 can
(14-1/2 oz.) stewed tomatoes, undrained
1 env.
(0.8 oz.) GOOD SEASONS Garlic & Herb Dressing Mix
1 lb.
red potatoes (about 3), cut into 3/4-inch chunks
3 carrots, cut into 1/2-inch-thick slices
4 cups
hot cooked noodles
Make It
COAT meat with flour. Heat oil in Dutch oven or
large deep skillet on medium-high heat. Add meat and onions; cook and
stir 5 to 8 min. or until meat is evenly browned. Stir in broth,
tomatoes and dressing mix. Bring to boil, stirring occasionally; cover.
Simmer on low heat 15 min., stirring occasionally.
ADD potatoes and carrots; simmer, covered, 45 min. or until meat is tender and sauce is thickened, uncovering after 30 min. and stirring occasionally.
SERVE over noodles.
Then, I would make these yummy looking biscuits

One-Bowl Cheddar Biscuits

What You Need
2-1/4 cups all-purpose baking mix1/2 cup KRAFT Shredded Cheddar Cheese2 Tbsp. chopped fresh herbs1/4 cup BREAKSTONE'S Sour Cream2 Tbsp. GREY POUPON Dijon Mustard1/3 cup milk1 egg, beaten12 fresh Italian parsley leavesMake It
PLACE dough on surface lightly dusted with additional baking mix; knead 10 times. Pat into 1/2-inch-thick circle. Cut with 2-inch biscuit cutter dusted with baking mix. Place biscuits, 2 inches apart, on baking sheet. Brush lightly with egg; top with parsley. Brush with remaining egg.
HEAT oven to 425°F.
COMBINE baking mix, cheese and herbs in large bowl. Mix sour cream and mustard in small bowl. Gradually stir in milk. Add to baking mix mixture; stir just until moistened.
BAKE 12 to 15 min. or until lightly browned. Serve warm.
I think I will round out the menu with this delish looking dessert.
Grasshopper Parfaits
What You Need15 OREO Cookies, finely chopped (about 1-1/2 cups)10 chocolate-covered mint patties, finely chopped (about 1/2 cup)2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding1 qt. (4 cups) cold milk2 to 4 drops green food coloring2 cups thawed COOL WHIP Whipped ToppingMake It
COMBINE chopped cookies and mint patties.
BEAT pudding mixes and milk with whisk 2 min. Let stand 5 min. Meanwhile, stir food coloring into COOL WHIP until blended.
LAYER half each of the pudding, COOL WHIP and cookie mixture evenly in 12 parfait glasses. Repeat layers. Refrigerate 30 min.
I plan on making each of these dishes with a few modifications to each one so that Husby can enjoy them. I will post pics with a review of each recipe. I can't wait to make this menu, it's going to be so much fun!
