Tasty Tuesday #2

Hi Lovelies! It time for Tasty Tuesday! Today I'm going to share my recipe for Mexican cornbread. I have been making this particular recipe for years, it has become a weekly dinner (usually on Friday or Saturday nights) during the long winter months. It tastes great with some chips and salsa and a nice tossed salad on the side. 

Here is the recipe. Enjoy!!! 

Mexican Cornbread

1/2 to 1 lb hamburger meat (browned)
2 eggs, beaten
1 can cream style corn
1 can green chilies or jalepanos, chopped 
1 cup cornmeal
1/2 cup canola oil
1/2 cup milk
1 1/2 cups grated cheddar cheese
1/2 teaspoon salt
1/2 teaspoon baking soda

Brown hamburger meat, drain if there is any oil. Mix dry ingrediants (corn meal, baking soda, and salt. Next, mix wet ingredients together (eggs, corn, milk, and oil). Add the wet ingredients to the dry ingridents. Mix well.  Spray baking pan ( I use an 8 x 11 pan) with cooking spray. Add half of the cornbread batter to the pan, then layer the hamburger meat, then sprinkle the cheese on the hamburger layer and then add the chilies or jalapenos, and then add the other half of the cornbread batter on top. Bake at 350 degrees for 45 to 55 minutes. Serve with chips and salsa and a tossed salad.
